Our Ingredients
We use only the highest quality all natural ingredients available. Wherever possible we use certified organics. We use vegetarian fed eggs. We avoid using artificial ingredients, preservatives or fillers.
Flours-
We use a combination of ingredients to make up our flour blends, which vary from recipe to recipe, certified organic/gluten free almonds, walnuts and pecans, quinoa, brown rice, coconut flour, flaxseed, oats.
Soy Allergens -
For those folks who are sensitive to soy, you'll be happy to know that we do not use any soy flour in our flour blends or our bakery. Please Note: Our Belgian Chocolate Chips, white milk and dark do contain soy lecithin as an emulsifier.
Eggs -
We use only Eggland's Best organic eggs.
Why? Please read the following Egglsand's Best Statement -
Our Cage Free and Organic hen diet consists of healthy grains with no animal fat, no animal byproducts, and no recycled or processed food. It contains no added hormones, antibiotics, or steroids. The hens that lay our Organic eggs are fed only a certified organic version of Eggland's Best's patented feed.
Sweeteners-
Sugar Free Baked Goods -
For those folks who are sensitive to sugar or have sugar restricted diets we use a natural sugar substitute called, Maltitol for our sugar free baked goods.
Baked Goods with Sugar -
The majority of our customers who do not have to adhere to sugar restricted diets request their baked cakes, cupcakes and muffins be baked with sugar. However, please note that because we bake each item fresh to your order we offer several choices when it comes to sweeteners; such as, Organic Evaporated Cane Juice, Agave Nectar, Organic Honey or Organic Maple Syrup.
Organic Evaporated Cane Juice - Evaporated cane juice is a healthy alternative to refined sugar. While both sweeteners are made from sugar cane, evaporated cane juice does not undergo the same degree of processing that refined sugar does. Therefore, unlike refined sugar, it retains more of the nutrients found in sugar cane.
Agave Nectar - Agave is a sweet syrup, like honey, but a little thinner in consistency. Because it has a low glycemic index and will not elevate blood sugar, it is a great honey replacement for diabetics and low-glycemic dieters.
Honey - Honey is "the nectar and floral exudations of plants gathered and stored in the comb of honeybees." It is a thick, sticky syrup that is 40% sweeter than sugar. It has a high glycemic index, so it is not recommended for diabetics or low-glycemic dieters. Honey comes in a wide range of colors and flavors--darker honeys having stronger flavors and lighter honeys more mild flavors.
Maple Syrup - Maple syrup is a very sweet liquid sweetener, made by harvesting the sap from maple trees and boiling it down to a syrup. Maple syrup has a very high glycemic index and will make your blood sugar jump. It is not recommended for those who are diabetic or on a low-glycemic diet. It's fine for anyone else who wants a very low-processed natural sweetener.
Stevia - We do not use Stevia in our products. The FDA stopped the sale of Stevia in 1986. In 1991 they said it was not suitable as a food additive, for the reason that "its safety had not been adequately demonstrated".
Chocolate -
We use only REAL Belgian chocolate with real vanilla not artificial vanillan which is derived from wheat. Our milk and white chocolate contains milk fat, our dark chocolate does not. All of our chocolate and chocolate chips do contain soy lechithin.

Yes! - As someone with severe gluten intolerance, amongst other health issues, I personally understand the importance of finding a safe source of gluten free food. We run a completely dedicated wheat/gluten free bakery. Simply put - there is never a doubt about cross contamination! We are a small family owned and operated company with special dietary needs and have built our business on creating the best tasting all natural non-contaminated products on the market!
Wheat, barley, rye, or any of their gluten containing derivatives are NOT in our facility.
Please Note - In our retail store and online shop we do sell many items containing wheat/gluten; however, these products are made in outside facilities, packaged and then brought into our retail store for sale or use in gift baskets.
Allergen information: Peanuts, tree nuts, dairy, eggs and corn are present in our facility. We follow safe manufacturing practices and undergo through cleanings; however, as clean as we are unfortunately there is always a slight chance of cross contact.
